RICE CHEX MIX - SUPER QUICK AND EASY!


This is a recipe for RICE CHEX MIX that I got from a good friend years ago.  I like it because it has only a few ingredients--and they are all ones I like.  It's an easy and quick alternative to caramel corn.  It makes a bunch, and so we like to put some in cellophane bags and tie with a pretty ribbon to give away.  It keeps for a long time, if kept in air tight containers.

FAVORITE RICE CHEX MIX
1 17-oz. Rice Chex cereal
1 7-oz. pkg. shredded coconut
1 8-oz. pkg slivered almonds
1 1/2 cups sugar
1 1/4 cups light Karo syrup
1 1/2 cups butter
Mix together cereal, coconut and almonds in a large mixing bowl.  Set aside.  In a medium saucepan, melt together and stir to a boil the sugar, corn syrup and butter.  Stir and boil 3 minutes.  Pour over cereal, and stir until well blended.  Keep stored in an airtight container.
