FROZEN PEACH COCKTAIL - REFRESHING AND TASTY!


This is a great recipe for FROZEN PEACH COCKTAIL.  I like to make it every fall, when the peaches are on.  There are peaches that freeze better than others--I like to use Sun Prince.  If you get yours at a fruit stand, they usually will know which ones freeze well, as opposed to those that can well.  (All peaches are good eating!)  I make a big bowl of the cocktail, then freeze in individual quart freezer bags.  To serve, just take out and let sit for about 1/2 an hour, then scoop out and serve.  Before serving, you can add fresh green grapes and sliced bananas, if desired.  ...So refreshing!  I've given this as a neighborhood gift at Christmas, birthday gifts, or just because I'm thinking of someone.  The frozen fruit cocktail is great to have in the freezer and have for a spur-of-the-moment treat to serve or give away.

FROZEN PEACH COCKTAIL 
10 large fresh peaches, peeled and diced
1 cup orange juice
1 can crushed pineapple, with juice
3 cups sugar
1/3 cup lemon juice
1 bottle maraschino cherries, with juice.
Mix together.  Freeze in Ziploc quart freezer bags.  Can be frozen for up to a year.
